3 days.

I love three day weekends.  They give you just enough time to be equally productive AND lazy.

I accomplished many different things.

First I ran my 15-miler on Saturday morning.  It was an awesome run.

Then I headed out to Michaels and Home Depot to get the supplies to make a light box.

Given that it’s going to be getting darker outside and I live in a basement, I needed to make something so I can take pictures when there is no light outside.  I used both Angela and Ashley’s directions.  It was super easy to make.

For the record I have no idea what I’m doing.  Please bear with me while I figure out how to a) use my DSLR and 2) use my light box.  It could take awhile.

As I mentioned on Wednesday, I’ve been wanting to upgrade my cart to something similar to this.

I think it turned out okay.  I skipped the stamps and still need to find some hardware to attach to it, but for my first attempt at painting something (and not having to pay someone to fix the mess I made – just ask my dad about the summer he paid me to paint the fence…..) I’d say it turned out pretty well.

I also did a lot of cooking this weekend.

I made Angela’s Lightened Up Protein Power Bowl to take to work this week.  God I love this stuff.

I made some Mmmm sauce to have handy.

Inspired by Jessica, I made my first attempt at real homemade Chinese food.  This General Tso’s Chicken recipe is amazing.  If you were like me and too afraid to try cooking Chinese food out of fear it won’t taste nearly as good as takeout, try this.  Now.

I also made some pasta salad for Rob to eat for lunch (recipe coming soon).

And I made a batch of my Buffalo Hummus.

The weekend wasn’t all work though.

Last night Rob and I watched Forks Over Knives over a bottle of Malbec.  I’ll write more on that later this week.

Finally, I got to finish the last season of Lost on Netflix.  It is so nice to just laze around in bed, watching TV, cuddled up with the Roonster.

Dad came in every once in a while to check on us.

Rooney and I were happy to see him every time he checked in.  I left the making out to Roo and Rob though :)

mmm that pasta salad looks yummy – looking fwd to seeing the recipe! glad to hear your 15 miler went well. your design skills are very inspiring!
